1 egg, or egg substitute
1/4 cup Parmesan cheese
1/4 cup olive oil
1 tablespoon lemon juice
1 teaspoon wine vinegar
1 teaspoon Worchestershire sauce
1 clove garlic
Blue cheese, the size of an egg
Salt and pepper to taste
1 teaspoon Dijon mustard
Bacon or anchovies, crumbled
Beat egg in food processor or blender. Add remaining ingredients, except lettuce, croutons and anchovies.
Blend well and pour over lettuce, torn in bite sized pieces. Add croutons and bacon/anchovies.
For a tasty variation, replace bacon with a can of tuna, drained and flaked.
